Cooking Up a Hooley in the Kitchen: Grillin’ Time

Grillin’ Time

Grilled food just tastes better. It’s a touch of sunshine and summer. There really is no limit to what you can cook on a grill. This yummy salad is entirely made cooking over those hot grates. Once you prep and assemble all the ingredients, you can just pull up a chair and let the grill do all the work.

Serves 4

Ingredients:

  • 2  12 ounce Boneless Strip Steaks
  • 2 heads Romain Lettuce
  • 1 large Red Onion
  • 1 qt or 12 oz small Red Potatoes
  • 4 ounces Crumbled Blue Cheese
  • ½ cup Caesar Salad Dressing
  • 12 ounce bottle or can of Guinness Stout
  • ½ cup A1 sauce
  • ½ cup Ketchup
  • 3 tablespoons Garlic Salt
  • Salt and Pepper to taste
  • Take steaks out and sprinkle heavily with garlic salt and let come to room temperature.
  • Boil or microwave the red potatoes to partially cook them
  • Peel and cut Red Onion into quarters.
  • Rince Romaine making sure to remove all the gritty stuff by the core. Cut the core off.
  • Heat the grill to approximately 450 degrees.
  • In a small saucepan combine the Guinness, a1 sauce and Ketchup over medium heat until thick and combined.  This can be done on a stovetop or on the grill.
  • Once the grill is to temperature, place the steaks, onion, potatoes and romaine on a large baking sheet to easily transport to the grill.
  • Place the potatoes cut side down on the grill, close the grill and let cook for 5 minutes.
  • Turn over the potatoes to cook on the other side and then put the onion pieces on the grill to cook for another few minutes.
  • Flip the onion pieces over and turn the potatoes over again.
  • Place steaks on the grill, close it and let cook for 4 minutes.
  • Turn steaks over and cook for an additional 3 minutes. Remove any onions or potatoes that appear done.
  • Coat one side of the steak with the sauce mixture and cook for 1 more minute. Coat the other side with the sauce and flip and cool for one more minute to get the nice grill marks.
  • Remove steak, potatoes and onions from the grill.
  • Place the romaine leaves on the grill. DO NOT close the grill. They will take about 30 seconds per side. Once you have all the romaine leaves grilled, bring all the ingredients in.
  • Chop the lettuce, potatoes, and onion to your desired size and place in a large bowl. Add the Caesar dressing and toss to coat everything.
  • Sprinkle the Blue Cheese crumbles over the salad.
  • Spread a little more sauce on the steaks and slice into thin pieces. Place on top of the salad and serve.
