
You Can Put an Irish Twist on Anything
While Irish Cuisine does boast some iconic and signature dishes, the amount of truly Irish dishes is arguably less than some other cuisines. Yet, there are so easy ways to infuse everyday foods or those from other cultures with an Irish twist.
Corned Beef Rollups
Makes 6 Rollups
Ingredients

- ¾ lb cooked Corned Beef (thinly sliced from the deli)
- 18 slices Swiss Cheese thin sliced)
- 6 round Flour Tortillas (using the spinach and herb ones gives it a green look)
- 1 bag of Coleslaw Mix
- 6 tablespoons Thousand Island Dressing
- Garlic Powder
- Black Pepper
- ½ cup chopped Dill Pickles
- 1 cup Sour Cream
Directions
- Rinse coleslaw and dry. Place in a medium bowl. Sprinkle with a few dashes of Garlic Salt and Black Pepper. Stir in Thousand Island Dressing and set aside.
- Chop the pickles and in a small bowl, stir in the Sour Cream and a few dashes pf the Garlic Salt and Black Pepper. Set aside.
- Lay 6 tortillas on a flat surface. Spread the sour cream pickle mixture on each covering with a thin layer.
- Lay the corned beef slices on the tortillas, covering the entire area (usually 3-4 thin slices)
- Repeat this using the slices of Swiss cheese.
- Spoon a line of the Coleslaw mix on the edge a tortilla and roll up tightly.
Repeat this with the other 5 tortillas.
Wrap each tortilla tightly with plastic wrap and chill for a few hours. They will keep for a few days, so this is a good make ahead snack.
Unwrap each tortilla and slice into approximately 8 equal slices. Arrange cut side up. Enjoy.
