One of my favorite things to eat is appetizers. I could just replace all my meals with those. I love how fun it is to come up with new and tasty recipes.
What better combo for a delicious snack than bread, meat, and cheese? Truthfully, these happened when I was searching my fridge to find something small to eat with a salad. In about fifteen minutes, I had a great little companion to my salad – Irish Crostini.
So, what makes this Irish? Well, it has some beef, Irish Cheddar Cheese, a potato and a drizzle infused with Guinness.
Irish Crostini
Makes approximately 10 Slices

Ingredients:
1 loaf of Baguette or French Bread
½ lb. thin Roast Beef
1 tablespoon Vegetable Oil
½ cup cooked Shredded Hash Browns
1 Green Onion
1/3 cup Guinness Stout
½ cup Steak Sauce
2 tablespoons Stone Ground Mustard
½ pound thin sliced Irish Cheddar Cheese
Salt and Pepper to taste
Directions:
In a skillet, place the oil and hash browns. Cook over medium heat until crispy. Set aside on a towel to drain.
Dice the green onion into small pieces, using both the green and white parts. Using the oil still left in the pan, fry up the onion parts until slightly wilted and crispy.
In a small saucepan, over medium heat, cook the Guinness and steak sauce until heated through and combined.
Slice the bread on a diagonal into 1/3-inch-thick slices and place on baking sheet. Toast in the oven at 350* for 5 minutes until slightly browned.
Remove from the pan and spread a generous amount of the mustard on each slice.
Place the roast beef into the Guinness Steak Sauce mixture and let it soak up the juices for about 2 minutes.
Top each bread slice with a small slice of the Cheddar cheese and then the roast beef. Sprinkle some hash brown pieces and onions over the top. Add salt and pepper to taste.
Finally, drizzle each one with a little more of the Guinness steak sauce.
