Cooking Up a Hooley in the Kitchen:

Cosy Winter Breakfast

The smell of breakfast on a cozy winter morning is the best. There is such a wide variety of dishes you can make for your morning meal. One I love and is surprisingly easy to make is crepes. These are a French inspired dish but you can Irish them up by pairing it with a nice cup of Irish Breakfast Tea or adding some Bailey’s to your whipped cream.

Crepes

Makes approximately 12 crepes

  • 3 Tbsp Unsalted Butter Plus 3-4 more for the pan
  • 1 cup All Purpose Flour
  • 1 Tbsp Granulated Sugar
  • 1/8 Teas Kosher Salt
  • ¾ cup Whole Milk
  • ½ cup room temperature Water
  • 2 Large Eggs room temperature
  • 1 ½ Teas Vanilla Extract
  • Melt 3 Tbsp Butter in microwave or in a small pan on the stove. Let it cool for 5 minutes.
  • Combine the remaining ingredients with the melted butter n a blender until smooth.
  • Keep covered and refrigerate for 30-60 minutes or overnight. This part is essential.
  • If the mixture looks separated after chilling, blend for a few seconds until smooth and the texture of cream.
  • In an 8-inch skillet, over medium heat, add a generous pat of butter and melt to cover the pan.
  • Pour 3 tablespoons of batter into the center of the pan. Swirl the batter around the entire pan to coat it all with a thin layer of the batter.
  • Cook until the edges are browning. This takes just a minute or two. Flip and cook the other side.
  • Transfer to a plate with a paper towel.

Cook all the crepes before filling. Add butter to the pan between cooking each crepe.

Once all the crepes are finished, you can fill them with your favorite fruit or filling such as chocolate or whipped cream of caramel.

Savory crepes are delicious as well. Ham and cheese or mushrooms and goat cheese are tasty.

You can fill them with any type of meat or scrambled eggs.

They can also be drizzled or topped with chocolate or whipped cream or cheese for the savory ones. Pretty much the sky is the limit.

These are great for breakfasts, brunches, or lunches. Enjoy!
