
Time for Getting Cozy
Nothing is more comforting than a warm crock of homemade soup this time of year. I love this Irish version of Onion Soup. It is simple and so satisfying. After trying this once, it will become a favorite.
Irish Cheddar Onion Soup
Makes 8 servings

Ingredients
- 6 large Sweet Onion
- 6-8 sprigs of Fresh Thyme
- 2 Tablespoons Olive Oil
- 2 Tablespoons Kosher Salt
- 2 Teaspoons Black Pepper
- 1 bottle Guinness Stout beer
- 2 32-ounce cartons Beef Stock
- 2 Tablespoons Worcestershire Sauce
- 8 large slices Baguette or Brown Bread
- 16 ounces Irish Cheddar Cheese
Directions
- Peel and cut all the onions into thin slices and rings
- Toss with the salt and pepper
- Remove the Thyme leaves from the vine.
- Put onions in a large soup pot with olive oil and thyme leaves
- Sauté on medium for approx. 30 minutes until they are soft and slightly caramelized.
- Pour Guinness into the pot and continue cooking until the liquid reduces by half.
- Add in the Worcestershire Sauce and Beef Stock.
- Lower the heat to medium low and simmer for at least one hour but you can cook for several hours if you wish.
To serve: Slice bread into a one-inch-thick slice. Toast the slice until sightly browned.
Ladle soup into crock or bowl.
Place bread slice on top and cover the top with two ounces of Irish Cheddar Cheese. This can be shredded or sliced.
Place the crock or bowl on a baking sheet and broil in the oven until the cheese is slightly browned and bubbly.
Be very careful removing the crocks or bowls from the baking sheet and let cool slightly because it will be extremely hot.
Optional: Sprinkle top with some thyme leaves.
