Cozy Up with Guinness Onion Meatballs: A Perfect Fall Dish

Comfort Food Time

I’m sitting here in the heat and sunshine, writing this about something perfect for those upcoming Fall nights when you want to indulge in something so yummy, comfy, and cozy. This savory and satisfying dish comes together quickly and can feed a crowd.

Guinness Onion Meatballs

Makes 4 servings

Ingredients:

  • 2 pounds 80/20 Ground Beef
  • 2 Eggs
  • 4 Tablespoons Worcestershire Sauce
  • 1 cup Seasoned Breadcrumbs
  • ½ Medium Yellow Onion, chopped small
  • 2 teaspoons Minced Garlic
  • 4 ounces Shredded Irish Cheddar Cheese
  • Generous amounts of Black Pepper and Kosher Salt to taste

Mix all ingredients together in a large bowl and form into approximately 12 2–3-ounce meatballs. In two 12-inch skillets, drizzle a small amount of Olive Oil and place the meatballs in each skillet. Cook on medium heat for approximately 16 minutes, turning meatballs several times to brown all sides. Remove meatballs from skillet and set aside. Cover them with foil to keep warm.

Guinness Onion Gravy

Ingredients:

  • 1 bottle Guinness Stout
  • ¼ cup Worcestershire Sauce
  • ½ Yellow Onion, sliced thin
  • 2 tablespoons Unsalted Butter
  • 2 tablespoons Mustard, any variety

Pour ½ bottle of Guinness Stout into each skillet and whisk vigorously to loosen all the bits from the meatballs. Add in sliced onion and cook for two minutes. Stir in mustard, butter, and Worcestershire sauce. Whisk until smooth and slightly thickened.

Assembly

Place mashed potatoes in the bottom of a serving dish or plate. Place 2-3 meatballs on top. Drizzle gravy over the meatballs and garnish with chopped chives and ribbons of cheddar cheese.

Mashed Potatoes

The meatballs taste great placed on a serving of your favorite mashed potatoes. They are also delicious on colcannon or on mashed rutabaga.

Garnish:

  • ½ cup Chives, chopped small
  • 4 ounces Cheddar Cheese, sliced in ribbons using a potato peeler
